Mini Vanilla Cake – Vegan and Simple

Vegan Mini Vanilla Cake

Equipment

  • 5" cake pan
  • Oven
  • Large and medium mixing bowls

Ingredients

Vanilla Cake

  • 3/4 cup all-purpose flour
  • 3/4 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 cup pure maple syrup
  • 1/4 tsp salt
  • 1/3 cup soy milk (or plant milk of choice)
  • 1/4 cup soy yogurt (or unseetened apple sauce)

Glaze

  • 1 1/2 tbsp water
  • 2 tbsp vegan butter
  • 1/3 cup confectioner's sugar
  • 1/4 tsp vanilla extract

Instructions

Vanilla Cake

  • Preheat your oven at 350ºF or 176ºC.
  • Whisk all dry ingredients together in your large bowl, and all wet ingredients in your medium bowl.
  • Pour wet ingredients into dry ingredients, and mix well.
  • Pour into 5" cake pan, and bake for 35-40 minutes. Let cool for 15-20 minutes before glazing.

Glaze

  • Combine all ingredients together, and whisk well until all lumps disappear.
  • Drizzle over your cake, and enjoy!
