The Summer calls for tropical, refreshing snacks and cold treats! And nothing screams tropical more than citrus fruits and coconuts. That’s why we were obsessed with the idea of this orange chia seed pudding recipe with coconut milk!
We think this creamy, delicious treat is a great alternative to full-fat dairy pudding and offers many additional health benefits! In fact, chia seeds are a great source of omega-3s, fiber, and B vitamins.
For this recipe, we simply blended some oranges with coconut milk, vanilla extract, and maple syrup, then added our chia seeds! Before dishing your portions into a few dessert glasses, make sure you let your pudding thicken naturally for about 2 hours in the fridge. And for extra special presentation, try chopping up some fresh oranges and placing them over top!

Orange Chia Seed Pudding
- 3 Glasses
- 1 1/4 cups coconut milk
- 1 cup oranges peeled, seeded, pith removed (plus 1 extra orange chopped in sections for garnish)
- 1/4 cup chia seeds
- 1 tsp. pure maple syrup
- 1/8 tsp. vanilla extract
- Blend all ingredients together, except the chia seeds.
- Pour your mixture into a bowl, and pour in the chia seeds. Mix well.
- Let sit for min. two hours in the refrigerator. Divide evenly among 3 glasses and top with extra chopped oranges. Enjoy!
