What Is JUST Egg Made Out Of?

If you’ve ever tried JUST Egg, you know how crazy similar it is to egg beaters or scrambled eggs. You can even use it to make quiche, omelets, or as an egg substitute in baked goods! So, what gives this product its characteristic texture?

Unlike chicken eggs, which coagulate when the muscle fibers lose their liquid, JUST Egg coagulates because of the unique gelation property of its star ingredient: mung beans. This makes it perfect for scrambling, whipping up omelets, thickening batters, or emulsifying and binding baked goods.

Although you can make your own DIY version at home using soaked mung beans, JUST has perfected the texture and flavor of their formula. They’ve done this by using mung bean protein isolate, canola oil, gellan gum, calcium citrate, turmeric, onion puree, salt, and other flavors and preservatives.
