Recently, I’ve become obsessed with this vegan chocolate chia pudding. It’s so simple to make and so yum! If you’re a chocolate lover looking for a healthy way to get your cacao-fix, this is the way to go. Did I mention that this dessert is actually super healthy as well? Chia Seeds are superfoods! Per gram, chia seeds have more calcium than milk, more iron than beef, and more omega-3 than salmon. (wow right?)
Prepping foods like chia pudding, overnight oats, and soups/stews is one of the best ways to save time and relieve stress! It’s also very therapeutic prepping healthy, nourishing foods on a Sunday afternoon or on a slow evening.
This time around, we simply combined chia seeds, cacao powder, maple syrup, and vegan milk in a mason jar. Then, we shook it all up, left it to soak for about an hour, and topped it off with coconut flakes. If you’d like, you can add cacao nibs and a pinch of salt to elevate this plant-based dessert!

- 1 mason jars with lids
- 1 cup soy milk or dairy-free milk of choice
- 1/4 cup chia seeds
- 1.5 tbsp maple syrup
- 2 tsp cacao powder
- coconut flakes (optional)
- Combine all ingredients in a mason jar and shake it up!
- Let sit in the refrigerator for at least 1 hour, or overnight.
- Garnish with coconut flakes, and enjoy!
