Easy Tofu Scramble - Vegan Scrambled Eggs

Tofu Scramble

This recipe is essential for anyone transitioning to a vegan diet. If you haven't heard of tofu scramble, it's the low-cholesterol, plant-based version of scrambled eggs. So, what's the secret to our luscious vegan scramble? Firm silken tofu.

Tofu Scramble

  • 1 block tofu (silken, firm)

  • 1/2 small onion (diced)

  • 1 small pear tomato (diced)

  • 1 tbsp chives (sliced)

  • 1 tsp cilantro (dried)

  • 1/2 tsp sea salt

  • 1/2 tsp pepper (ground)

  • 1/2 tsp garlic powder

  • 1/4 tsp paprika

  • 1/4 tsp turmeric (ground)

  • 1 tsp olive oil (virgin)

  1. Heat and grease your saucepan with olive oil.

  2. Prep your vegetables, then, using your hands, crumble up your block of firm silken tofu.

  3. Add onion, tomato, salt, cilantro, and spices to your pan, and fry until onions are transparent and the mixture is fragrant.

  4. Add your crumbled tofu to the pan, and stir all ingredients together until well incorporated.

  5. Garnish with chives, and serve with whole grain toast.
