How Should I Cook JUST Egg?

If you’ve ever tried a meal prepared with JUST Eggs, you know just how crazy similar they are to chicken eggs! What is JUST Egg?

These plant-based eggs are made out of mung bean protein isolate in a liquid format. Mung beans have a unique gelation property that causes them to resemble scrambled eggs during the cooking process.

Mung bean protein isolate is basically a mung-bean based protein powder. Not only does this mean you’re getting plenty of plant protein in each serving, it also means you’ll need to give them a good shake before cooking, as the powder may have separated slightly from the liquid base.

Basic Cooking Methods

Scrambled Eggs: When it comes to scrambling, JUST is as straightforward as chicken eggs. Heat up a small saucepan, grease lightly, sauté any added veggies for 2-3 minutes and pour in your JUST egg liquid. Let it set for 1-2 minutes at medium-low heat, then begin stirring as the mixture continues to thicken. Your scrambled JUST eggs should take 5-7 minutes to cook through entirely.

Omelets: If you would like to prepare an omelet instead, repeat the steps in the scrambled egg method, but instead of stirring, pour in the eggs and swirl lightly to distribute equally all over the pan. Then, cover with a lid, and let them set at medium-low heat for 2-3 minutes. Make sure the omelet is fully set, and once the spatula can slip under easily to loosen it, flip one side over the other. Transfer to a plate, serve with any garnish you’d like, and enjoy!

Baking: You can also use JUST eggs for vegan baking, by replacing each egg with 3 tbsp. of the plant-based liquid in your batter. Folded Plant Eggs: If you went for JUST’s folded plant eggs, the fastest method is to prepare them in the microwave for 90 seconds, wrapped in a piece of paper towel. However, you can also cook them in the oven at 350ºF for 15 minutes, covered in foil. The final option is to heat them in the toaster oven for about 6 minutes.


How Much JUST Egg Equals One Egg?
