Tofu Veggie Stir Fry Recipe

If you can't get enough Chinese takeout, we have a healthy quick-fix for you! This high-protein, umami dish is the perfect comfort food for lazy movie nights at home.

Asian Sweet Ginger Sauce

  • 1/2 cup coconut aminos ((or low-sodium soy sauce))

  • 1/4 cup water (filtered)

  • 1/4 cup sesame oil

  • 2 tbsp ginger (grated)

  • 4 cloves garlic (finely minced)

  • 3 tbsp rice vinegar

  • 2 tbsp maple syrup

    Stir Fry Mix

  • 1 block tofu (extra firm, pressed, cubed)

  • 1 cup green beans (trimmed)

  • 1 medium red bell pepper (sliced)

  • 1 medium onion (sliced)

  • 1 cup mushrooms (sliced)

Asian Sweet Ginger Sauce

  1. Combine all ingredients in a serving bowl, and whisk together. Let sit for about 15 minutes.

Stir-Fry

  1. Heat and grease a saucepan. Fry tofu and veggies together with 1/3 of your sauce, until veggies are tender and tofu is golden.

  2. Add the rest of the sauce and let simmer for about 5 minutes.

  3. Serve over a bed of short-grain rice or rice noodles.

-For extra flavor, marinate your tofu beforehand in about 1/4 of your sauce.
