Quick & Easy Vegan Crab Salad Recipe
Not a fan of pre-seasoned store-bought substitutes? Like to put your own spin on your meals? Try out this easy crab salad base and flavor it with any additional spices you’d like!
Ingredients
100g Organic Jackfruit, chopped or shredded.
3 tbsp. vegan mayo
2 tbsp. diced red onion
1/4 rib of celery, diced
1 green onion, finely sliced
1 sprig of parsley, chopped
1/2 tsp. Old Bay seasoning
1/4 tsp. smoked paprika
1 nori sheet, finely chopped
juice of one lemon
salt and pepper to taste
Method
Drain your jackfruit, remove any seeds, and squeeze out any excess liquid with a towel or cheesecloth. Then, chop to your desired texture.
Toss all of your ingredients (including the prepped jackfruit) into a medium mixing bowl. Stir, then add more vegan mayo if needed.
Enjoy in sandwiches, wraps, or over mixed leafy greens.
